Wild Mushroom Soup

Ingredients

  1. 1/4 cup olive oil
  2. 1 large onion – diced
  3. 3 cloves garlic
  4. 1 tablespoon thyme
  5. 3 cups water
  6. 3 cups vegetable stock
  7. 226 grams potatoes, sliced
  8. 3/4 cup mushrooms
  9. Salt
  10. Pepper
  11. 1/2 tsp soy sauce
  12. 1/2 tsp white vinegar

Steps

  1. In a large pot heat oil. Add onion, cook for 5 minutes, stirring often. Add garlic, mushrooms and herbs, saute for 2 minutes. Add stock and water, potatoes, salt & pepper. Bring to a boil. Simmer, covered for 20 minutes.

  2. Check potatoes are fork tender. Blend soup until smooth. Return to pot. Add soy and vinegar. Serve.
