Ingredients
- 1/4 cup olive oil
- 1 large onion – diced
- 3 cloves garlic
- 1 tablespoon thyme
- 3 cups water
- 3 cups vegetable stock
- 226 grams potatoes, sliced
- 3/4 cup mushrooms
- Salt
- Pepper
- 1/2 tsp soy sauce
- 1/2 tsp white vinegar
Steps
In a large pot heat oil. Add onion, cook for 5 minutes, stirring often. Add garlic, mushrooms and herbs, saute for 2 minutes. Add stock and water, potatoes, salt & pepper. Bring to a boil. Simmer, covered for 20 minutes.
Check potatoes are fork tender. Blend soup until smooth. Return to pot. Add soy and vinegar. Serve.
