I’ve been making this for my family once a week for a couple months now. It’s very budget friendly,lasts for 2-3 dinners for our family of 4 and I love that it’s healthy so I feel good about feeding these meal to my kids and hubby.
Ingredients
- 1 (28 oz) can diced tomato
- 1 (1 lb) bag of dry lentils
- 1 packet organic chili seasoning
- 1 can olives
- 1 can mushrooms
- 4 tablespoons tube cilantro
- to taste Sea salt
- to taste Pepper
- Dash tumeric
- 1 (32 oz) bottle of broth of choice
Steps
Add broth, diced tomatoes and lentils in large pot. Heat until starts boiling.
After boiling turn down heat to simmer and add chili packet and other seasoning.
Simmer for about 30-45 minutes or until lentils are al dente.
Once lentils are al dente, add the olives and mushrooms and cook for another 5-10 minutes.
Then your done! I usually cook a pot of rice to add with the chili and also sometimes sour cream and green onion for topping.
