Toasted onion poppy ciabatta bread with goat cheese and pesto

This is heaven! The pesto and goat cheese complement each other so well.


  1. 2 onion poppy ciabatta bread sliced into 8 pieces
  2. Robust Olive oil
  3. Equal parts onion and garlic powder
  4. 1 tbs rosemary
  5. 1 tbs oregano
  6. 1 tsp pepper
  7. Cheese spread
  8. 1/3 cup goat cheese
  9. 1 tbs feta cheese
  10. 1 heaping tbs Italian pesto


  1. Preheat oven to 400 degrees

  2. Half 4 buns to make 8 slices

  3. Top with all your seasonings then drizzle with olive oil and bake for 8 to 10 minutes or until golden brown.

  4. While bread is baking, make your cheese spread. Mix the two cheeses together, I find mashing with a spoon does this best. Add half the pesto and mix. Top with remaining pesto.
