- Sweet potato (cubed)
- Olive oil
- 1 tsp chili powder
- 1/2 tsp ground cumin
- Salt
- Siete tortillas
- Shredded cheese
- Can black beans
Steps
Warm olive oil over medium heat in skillet. Add chopped sweet potatoes, then add chili powder, cumin & salt. Stir to combine. Once the pan is sizzling, add 1/4 cup of water then cover pan and reduce heat to low. Cook, stirring occasionally, about 10 min
Heat a large skillet over medium heat. Warm one tortilla for about 30 sec, flipping halfway. Flip once more and sprinkle one-half of the tortilla with cheese. Cover the cheese w sweet potatoes and black beans, sprinkle w cheese. Fold over the empty side of the tortilla to enclose the fillings. Cook both sides until golden & crispy.
