Sweet Potato Black Bean Quesadilla


  1. Sweet potato (cubed)
  2. Olive oil
  3. 1 tsp chili powder
  4. 1/2 tsp ground cumin
  5. Salt
  6. Siete tortillas
  7. Shredded cheese
  8. Can black beans


  1. Warm olive oil over medium heat in skillet. Add chopped sweet potatoes, then add chili powder, cumin & salt. Stir to combine. Once the pan is sizzling, add 1/4 cup of water then cover pan and reduce heat to low. Cook, stirring occasionally, about 10 min

  2. Heat a large skillet over medium heat. Warm one tortilla for about 30 sec, flipping halfway. Flip once more and sprinkle one-half of the tortilla with cheese. Cover the cheese w sweet potatoes and black beans, sprinkle w cheese. Fold over the empty side of the tortilla to enclose the fillings. Cook both sides until golden & crispy.
