Solar Oven Blueberry Cornbread Muffins

I like cooking in many different ways. I recently got a GoSun Go , and I absolutely love it. In my bio it says I like my kitchen gadgets , I had just added another great way to cook. I can’t wait to take this baby camping. This way of cooking fits me so well , cooking with the sun . Iam an earthly kinda of a person. ( see my other recipe for making this in the oven.)

Ingredients

  1. 1/2 cup cornmeal
  2. 1/2 cup flour
  3. 1/4 cup sugar
  4. 2 teaspoons baking powder
  5. 1/2 teaspoon salt
  6. 1/2 cup water
  7. 1 cup blueberries
  8. Cheating way
  9. Jiffy cornbread mix follow box directions, add a handful of blueberries

Steps

  1. Add cornmeal, flour, sugar, baking powder and salt to bowl. Mix.
    Add water. Mix.
    Add blueberries and gently mix with spoon.

  2. Pour into silicone baking cups and bake for approximately 30-35 minutes with full sun. For cloudy days, extend baking time.

  3. Notes- I put my GoSun Go out in a open area on a bright day. Add your filled baking cups to the tray.

  4. Now, go back to work. Do whatever you were doing. Maybe it’s gardening. Maybe it’s relaxing. Whatever. Just enjoy the outdoors. Most things take at least 20 minutes to cook, so after 20 minutes I will check on them and then come back.

  5. And in 30 minutes I had delicious smelling (and tasting) Blueberry Cornbread Muffins. Check out the before and after.

  6. Muffins made without electricity! And because I used the silicone baking cups, they pop out of the cups without a crack (seriously, they all perfect).
