Shrimp with tomatoes and olives

this is a basic dinner recipe that my mother passed down to me


  1. 1 (10 oz.) box of couscous
  2. 1 tblspn of olive oil
  3. 1 small onion, chopped
  4. 1 (28 oz) can diced tomatoes, drained
  5. 3/4 cup pitted green olive
  6. 1/2 cup dry white wine
  7. salt and pepper
  8. 1 lb. medium shrimp, peeled and deveined


  1. Cook the couscous

  2. Meanwhile, heat the oil in large saucepan over medium high heat, add the onion and cook, stirring occasionally for 4 minutes

  3. Add tomatoes, olives, wine, 1:2 tsp of salt, 1/4 tsp pepper, simmer stirring until slightly thickened. 4-6 minutes

  4. Add the shrimp and cover. cook until shrimp are cooked through, 5 mins. Then mix with couscous
