this is a basic dinner recipe that my mother passed down to me
Ingredients
- 1 (10 oz.) box of couscous
- 1 tblspn of olive oil
- 1 small onion, chopped
- 1 (28 oz) can diced tomatoes, drained
- 3/4 cup pitted green olive
- 1/2 cup dry white wine
- salt and pepper
- 1 lb. medium shrimp, peeled and deveined
Steps
Cook the couscous
Meanwhile, heat the oil in large saucepan over medium high heat, add the onion and cook, stirring occasionally for 4 minutes
Add tomatoes, olives, wine, 1:2 tsp of salt, 1/4 tsp pepper, simmer stirring until slightly thickened. 4-6 minutes
Add the shrimp and cover. cook until shrimp are cooked through, 5 mins. Then mix with couscous
