- 1 lb ground chicken
- 2 shishito chili's
- 1 tsp powdered garlic
- 1 tsp powdered pepper
- Smoked salt to taste, regular salt okay
- 1 tsp ground tepin chili's
- 1/2 tsp hickory smoke powder, dissolved in cooking scotch
- 1 egg, beaten
- 1/4 cup bread crumbs
Mix it all together, leaving out the egg and bread crumbs. Cover and let sit for 20 minutes.
Egg in, then the bread crumbs and mix.
Cover and let sit for about 15 minutes so the bread crumbs can soak up some of the liquids.
Form into patties and cook low and slow. My induction cooktop is set to between med-low and medium. Cover for best results.
