I was just talking with Lena, our CM in Mexico City, about how eating well on a budget is such a great life skill to learn. Having delicious, nourishing food even when money’s tight is not only great for your health, but also for your overall sense of well being.
So my question for you today: WHAT’S YOUR FAVORITE BUDGET RECIPE TO MAKE AND HOW MUCH DOES IT COST PER SERVING?
One of my favorite budget cooking strategies is to buy a whole chicken, butcher it into pieces, roast the dark meat pieces, save the breast for something like stir fry or Thai laarb, then take the back and breast bone and use it for stock/soup.
A whole chicken usually costs me something between $6 and $10 depending on the store and current prices, so I can easily make complete meals after starch and veg for $1 to $2 per serving, depending on the sides.
