Parmesan Roasted Tomatoes


  1. 8 Roma Tomatoes, slice in quarters. 20 grape tomatoes, cut in half, can be substituted
  2. 8 teaspoons Grated Parmesan
  3. Ground Black Pepper


  1. Quarter each tomato. Place on foil covered, small cookie sheet.

  2. Cover each tomato quarter with 1/4 teaspoon of Parmesan.

  3. Grind pepper over all tomatoes to taste.

  4. Place in oven under broiler for 5 to 7 minutes or until cheese starts to slightly brown. Serve immediately.
