Out Of This World Potato Salad

This is worth the extra work! Super creamy and tasty.


  1. 4 lbs red potatoes
  2. 1 small red onion finely chopped
  3. 1 cup chopped celery
  4. 1 teaspoon salt
  5. 5 hard boiled eggs, chopped
  6. 2 tablespoons sweet relish
  7. 2 tablespoons chopped fresh dill
  8. 2 eggs beaten
  9. 1/3 cup sugar
  10. I teaspoon cornstarch
  11. to taste Salt,
  12. 1/2 cup vinegar
  13. 1 (5 oz) can evaporated milk
  14. 1 teaspoon yellow mustard
  15. 1/4 cup butter
  16. 1 cup mayonnaise
  17. 4-5 bacon stripes, crumbled


  1. Boil potatoes until can easily pierce with fork. Approximately 20 minutes. Drain, cool (can peel if you choose to) and dice. In large bowl add the boiled eggs, onions, celery, salt, relish and dill.

  2. While potatoes are cooking, whisk together eggs, sugar, cornstarch and salt. Stir in vinegar, milk and mustard. Cook over medium heat, stirring frequently until thickened. About 10 minutes. Remove from heat and add butter. Refrigerate until cool then add mayonnaise.

  3. Combine the dressing with potato mixture and let flavors combine several hours. Add crumbled bacon just before serving.
