Mexican Inspired Soup

Went into Cardenas Market on a mission to check it out!It’s predominantly Mexican products and I love that kind of food.

I bought some things that I’ve never purchased before and here’s my “winging it” soup.

Ingredients

  1. Hominy (Nixtamal Para Pozole)
  2. leaves Nopalitos, cactus
  3. several slices of onion
  4. 5 some garlic cloves, about
  5. 1 Anaheim chili
  6. Achiote Rojo
  7. can diced tomatoes
  8. Chayote squash, Mirliton in Louisiana..
  9. Can salsa
  10. Chicken, cut into chunks
  11. fresh squeezed lime juice, 1/2 lime
  12. Parsley and fresh sliced jalapenos for garnish

Steps

  1. This is the first time I’ve ever bought hominy (Nixtamal Para Pozole), that wasn’t in a can. This is the real deal! It’s only the corn and the alkaloid, no preservatives. I got the nopalitos already cleaned. You can get them fresh but then you have to pull all the little stickers out and I was in a hurry to get cooking!

  2. Have to have the grilled onions, garlic, and an Anaheim chili! When the chili is cooked take off the crispy skin; easy to do under water.

  3. Bought this since it reminded me of the red color you get when you buy carne asada meat. The yellow is chicken bouillon paste.

  4. More stuff…

  5. Don’t forget the meat!!!

  6. All in the pot.

  7. Simmer covered. I let mine go for an hour and twenty minutes. If in a hurry could just cook it until the meat is done. My squash was mostly already cooked and was a leftover.
