Mexican Cornbread

Ingredients

  1. 1 lb Ground Beef
  2. 2 Cans: Cream Style Sweet Corn
  3. 2 Cans: Ranch Style Beans
  4. 1 Box Jiffy Cornbread Mix
  5. 1 Egg
  6. 1 Cup: Milk
  7. 1-2 Cups: Shredded Cheese
  8. 2 tsp: Salt
  9. 2 tsp: Garlic Powder
  10. 1 tsp: Pepper
  11. Butter or Olive Oil

Steps

  1. Preheat oven to 400 F

  2. Brown the ground beef in butter/olive oil over medium-high heat.

  3. Drain the ground beef and return to the pot

  4. Add corn and ranch-style beans

  5. Stir and reduce heat to medium-low

  6. Gradually add in the garlic, salt, and pepper

  7. Prepare a casserole dish

  8. Add beef-mixture to the casserole dish

  9. Add a layer of cheese on top of the beef-mixture

  10. In another bowl, combine cornbread mix, egg, and milk

  11. Pour the cornbread mixture over everything in the casserole dish (spread evenly to cover)

  12. Bake, uncovered for about 45-minutes or until cornbread is golden brown and cooked through

  13. Let cool, serve, and enjoy!
