Lemon curd

It’s my favourite and is the best filling for tarts


  1. 1 cup sugar
  2. 3 eggs
  3. 2 lemons squeezed and rinded
  4. 90 g butter


  1. Get a saucepan and put it on low heat for a minute to warm up

  2. Put all ingredients in and mix

  3. Keep mixing until thick

  4. Add to tart shells or pour into warm, clean jars to save for later. Store jars in fridge
