This is just something I threw together one day and cant get my fill. Add whatever you want or not and make it your own. It’s just a good base recipe. I hope you enjoy and cant wait to hear what else you do with it.
- 1/2 bunch Asparagus
- 1/2 Any color of pepper
- 1/8 Onion
- 4-6 Cloves Garlic
- 1 Jalapeno – if you want some spice
- Shredded cheese
- Cream cheese
- 1 Boneless chicken breast
- 3-4 pieces Bacon
- Salt and pepper
Butterfly the chicken breasts and add salt and pepper as you see fit. Add a good portion of cream cheese to the inside of the chicken then sprinkle with shredded cheese and fold back over. I’ll add some jalapeno slices to the inside as I enjoy a little spice. Your choice
Cut up the asparagus, onion and peppers and add it to the pan you are going to put in the over. Your amounts will vary based on how much chicken you make and how much vegetables you are hungry for. If you have jalapeno add the rest to the pan as well.
Wrap the chicken in 2 to 3 pieces of bacon. Cut up one piece of bacon and add to the vegetables. Set the chicken wrapped in bacon directly on top of the vegetables.
Preheat your over to 375 and once everything is assembled cut your garlic and sprinkle over the top of the chicken and vegetables. Bake for about 30 min or until the bacon is done to your liking not to overcook the chicken. Pull out of the oven and enjoy.
