Grilled Summer Corn Salsa

Just freakin soo delish


  1. 3 corn on the cobb, grilled on bbq
  2. 1/2 jalepeno, minced
  3. 1 green onion, diced
  4. 1 tbsp butter
  5. 1 tomato (or 2 handfuls cherry tomato), diced
  6. 2 tbsp crumbled queso fresco
  7. Salt and pepper (to taste)
  8. Half lime


  1. Grill your corn on bbq (about 5-8 min)

  2. Cut the corn off the cob while still warm and toss together with tbsp butter (try to do this while its warm so the butter melts)

  3. Add all the other diced ingredients and stir to combine

  4. Stir in the cheese and squeeze of lime juice

  5. Serve as a side or with tortilla chips. FREAKIN YUM!!!
