*fast, simple* 20 minute Taco Soup


  1. 1 lb. meat of choice or tofu even (I prefer chicken)
  2. 1 can ‘rotel’ tomatoes
  3. 1 can corn
  4. 1 can pinto or black beans
  5. 1 can kidney beans
  6. 1 packet dry ranch mix
  7. 1 packet taco seasoning


  1. Cook protein, drain fat if necessary, add taco seasoning- stir to combine.

  2. In a large stock pot combine remaining ingredients- do not drain anything! Besides rinsing the black beans – After that is complete combine & stir in cooked & seasoned meat.

  3. Cook on medium heat for about 5-8 minutes until everything is nice & hot.

  4. Enjoy plain or top with shredded cheese, sour cream/green yogurt, & crushed tortilla chips.
