- 1 lb. meat of choice or tofu even (I prefer chicken)
- 1 can ‘rotel’ tomatoes
- 1 can corn
- 1 can pinto or black beans
- 1 can kidney beans
- 1 packet dry ranch mix
- 1 packet taco seasoning
Cook protein, drain fat if necessary, add taco seasoning- stir to combine.
In a large stock pot combine remaining ingredients- do not drain anything! Besides rinsing the black beans – After that is complete combine & stir in cooked & seasoned meat.
Cook on medium heat for about 5-8 minutes until everything is nice & hot.
Enjoy plain or top with shredded cheese, sour cream/green yogurt, & crushed tortilla chips.
