Coconut Pork w/ moringa and pumpkin

Ingredients

  1. 1 1/2 lbs Pork Butt, large cubes
  2. 1 can coconut milk
  3. 2 cups Moringa, plucked from stem
  4. 1 small kabocha squash, 1 inch cubes
  5. 1 medium onion, chopped to ⅙ inch size
  6. 3 large Garlic cloves, chopped
  7. 1 inch Ginger, round and lightly smashed
  8. 2 1/2 cup low sodium chicken broth or bullion
  9. 2 1/2 tbsp fish sauce
  10. 1/2 tbsp sugar or sugar alternative
  11. 1 bay leaf
  12. 2 tbsp oyster sauce (optional)
  13. to taste Salt & Pepper

Steps

  1. Tenderize Meat: Pressure Cooker: 2 cups water, 1 tsp salt, 1/4 pepper, 2 cloves smashed garlic. 20-25 minutes high pressure

  2. Tenderize Meat: Stove Top: enough water to cover meat, some salt, some pepper, couple garlic cloves smashed, simmer till tender

  3. PREP AROMATICS: pluck your moringa, peel and cube your squash, chop your onion, garlic and ginger
