Chipotlé Chicken Quesadillas

Home made tortillas give it the authentic flavor…


  1. 2 lbs cooked shredded chicken breast
  2. 1/4 cup sour cream
  3. 1/2 onion thinly sliced
  4. 6 chipotle chiles en adobo sauce
  5. to taste Salt
  6. Shredded mozzarella cheese, about 2 tbs for each quesadilla
  7. Cooking oil
  8. Lettuce
  9. Avacado
  10. Queso fresco
  11. Salsa of your liking to top
  12. 15-20 tortillas


  1. Sautee coocked shredded chicken and onion in about 2 tbsp of cooking oil until golden brown.

  2. In a blender add chiles en adobo sauce and sour cream and blend until smooth. Add sauce to chicken and simmer about 5 minites.

  3. On a flat top comal/grill heat up tortillas, you can use store bought or home made. Add chicken and shredded cheese, fold and cook until cheese is melted.

  4. Plate 3 to 4 for each person, topoll with lettuce, queso fresco, avacado and your favorite salsa.
