Chile con huevo


  1. 1 (8 oz) can tomato sauce
  2. 2 cups water
  3. 1-2 teaspoon salt
  4. 3-6 chiltepines
  5. Optional- 1/4 teaspoon garlic powder
  6. 2 tablespoons lard
  7. 1-1/2 tablespoons flour
  8. 6 eggs scrambled


  1. Take tomato sauce, water salt over med heat in a pot to simmer till it reduces its liquid to about 2 cups of tomato liquid.

  2. On a skillet melt lard and cook flour till its golden stir frequently dont burn

  3. Wisk in flour mixture to tomato sauce till thickened.

  4. Rise skillet and make scrambled eggs over med hi heat

  5. Add eggs to tomato sauce. And simmer for 5 min

  6. When ready serve hot enjoy with your choice tortilla flour or corn
