I wasn’t there when he made the original recipe forCeasar salad. Here is a tribute toCeasar Cardini and his daughter Rosa Maria Cardini. Ceasar Cardini is the one credited for creating Ceasar Salad.
- 1/2 teaspoon ground black pepper
- 4-1/2 tablespoon shredded Parmesan cheese divided
- 3/4 cup extra virgin olive oil
- 1 large coddled egg
- 1 teaspoon Worcestershire sauce
- 2 cloves garlic crushed
- 6 anchovy filets
- 1/4 tablespoon ground mustard
- 1 lime
Mince the anchovies finely.
Let’s coddle the egg. Get the water boiling. Put the egg in the boiling water for 1 minute. Immediately remove to the iced water. Keep in iced water for 1 minute. Its coddled.
Mix the ingredients one at a time, only half the cheese, whisking well as you add each ingredient. Add the olive oil last and coddled egg next to the last.
Add the remainder of the cheese to top of salad.
This will keep in the fridge for 3-4 weeks.
