Cauliflower Casserole


  1. 4-6 cups frozen cauliflower
  2. Half a brick of cream cheese
  3. 6 strips cooked bacon
  4. 1 cup Colby jack cheese
  5. 1/2 cup minced onion
  6. 3-4 cloves minced garlic
  7. to taste Salt and pepper


  1. Boil cauliflower until fork tender set aside

  2. Preheat oven at 400

  3. Caramelize onion and garlic in a skillet.

  4. Add onion, garlic, cooked bacon, cheese, salt and pepper to taste to softened cream cheese. Thin out with milk of necessary.

  5. Mix in cauliflower

  6. Add to oven safe casserole dish. Top with colby jack and bake until bubbly.
