Carrot Cake

Ingredients

  1. 6 cups grated carrot
  2. 1 cup brown sugar
  3. 1 cup coconut
  4. 4 eggs
  5. 1 1/2 cups white sugar
  6. 1 cup vegetable oil
  7. 2 tsp vanilla
  8. 16 oz crushed pineapple (drained)
  9. 3 cups all purpose flour
  10. 1 1/2 tsp baking soda
  11. 1 tsp salt
  12. 4 tsp ground cinnamon
  13. 1 cup walnuts (chopped)

Steps

  1. In a medium bowl, combine grated carrots and brown sugar. Set aside for 60 minutes. Then stir in coconut

  2. Preheat oven to 350°

  3. Grease and flour two 10” cake pans

  4. In a large bowl, beat eggs until light. Gradually beat in sugar, oil, and vanilla. Stir in pineapple

  5. Combine flour, baking soda, salt, and cinnamon in a bowl.

  6. Stir dry ingredients into the wet mixture until absorbed

  7. Stir in carrot mixture and walnuts

  8. Pour evenly into the prepared pans and bake for 45-50 minutes
