Buttermilk Crumb Cake

I just wanted something to go with a cup of coffee and here’s what I ended up with. It’s almost a brownie texture and lightly sweet. DELISH!

Ingredients

  1. 2 1/2 cups baking mix, I used bisquick
  2. 1 2/3 cup sugar
  3. 3 eggs
  4. 1/4 cup milk
  5. 1 tsp white vinegar, add to the milk
  6. 1 cup oil
  7. 1 tbsp vanilla
  8. 1/2 tsp cinnamon
  9. Dash salt
  10. Crumb top:
  11. 1 1/2 cup baking mix
  12. 1/2 cup brown sugar
  13. 1/3 cup white sugar
  14. 1 stick
  15. Cold butter or margarine

Steps

  1. Preheat oven to 359. Mix all the cake ingredients well. Pour into a greased cake pan.

  2. In another bowl mix the crumb ingredients well with a pastry cutter or fork until it looks like coarse crumbs. Spread over top of batter and bake for 30 minutes at 350 then turn the oven temp down to 325 and bake another 15 minutes or so or until toothpick comes out clean. Allow to cool before cutting.
