Bakwan Sayur Renyah (Crunchy Indonesian Vegetables Fritters)

Who doesn’t like deep fry snacks? Indonesia ?? is very popular for its crunchy fritters. When I was a kid,I liked to buy them a lot after school. The original version of these vegetables fritters are made of cabbage, carrots, and bean sprouts. I’m not a big fan of cabbage so I used green beans instead of cabbage. Ingredients

  1. 500 ml vegetable oil for deep frying
  2. 100 gr all purpose flour
  3. 50 gr rice flour
  4. 200 ml ice water
  5. 125 gr carrots, julienned
  6. 100 gr bean sprouts
  7. 125 gr green beans/cabbage, thinly chopped
  8. 2 green onions, thinly sliced
  9. bird eye chilies (optional)
  10. Ground spices:
  11. 2 cloves garlic
  12. 4 cloves shallots
  13. 1/2 sdt coriander
  14. 1/4 sdt chicken/mushroom bouillon
  15. 1/2 sdt salt or to taste
  16. 1/4 sdt white pepper powder or to taste

Steps

  1. In a big bowl, add all purpose flour and rice flour. Use a wooden spoon to mix the flour well.

  2. Pour the ice water little by little gradually and keep on mixing until incorporated.

  3. Add green beans, carrots, bean sprouts, green onions, and ground spices. Mix well.

  4. Season with salt, mushroom/chicken bouillon, and white pepper powder. Mix well again.

  5. Heat the vegetable oil until very hot. Take a big spoon of batter. Deep fry the batter until it’s golden brown.

  6. Serve warm with bird eye chilies ? as snacks (best if you drink some hot tea ☕️ with it) or serve with warm white rice as main dish! ?
