Baby’s Ketchup (AIP, nightshade free)

Looking for a nightshade free ketchup for my young children while their intestines are still developing, nightshades (like tomatos) are hard on the intestine and small children are still in a vulnerable state.

Ingredients

  1. 2 c Carrots, chopped
  2. 1/2 c Beets, chopped to as small as possible
  3. 1 T oil for sautéing onion
  4. 1/2 c Yellow onion, chopped
  5. 1/2 c Fresh lemon juice
  6. 2 tsp Apple cider vinegar
  7. 2 T Maple syrup
  8. 1 tsp Salt
  9. 1/2 tsp Garlic powder
  10. 1 T puréed Garlic
  11. Pinch cloves

Steps

  1. Cook/Steam carrots and beets in water until very soft. (Beets take for-freaking-ever, if you use a Vitamix you can get away with “just barely soft”)

  2. Sauté chopped onion in oil till translucent. About 7-10 min over medium heat.

  3. Toss everything into a POWERFUL food processor (or Vitamix) and mix till smooth, add water for thinning to desired consistency. (I prefer not to thin it)
