Looking for a nightshade free ketchup for my young children while their intestines are still developing, nightshades (like tomatos) are hard on the intestine and small children are still in a vulnerable state.
Ingredients
- 2 c Carrots, chopped
- 1/2 c Beets, chopped to as small as possible
- 1 T oil for sautéing onion
- 1/2 c Yellow onion, chopped
- 1/2 c Fresh lemon juice
- 2 tsp Apple cider vinegar
- 2 T Maple syrup
- 1 tsp Salt
- 1/2 tsp Garlic powder
- 1 T puréed Garlic
- Pinch cloves
Steps
Cook/Steam carrots and beets in water until very soft. (Beets take for-freaking-ever, if you use a Vitamix you can get away with “just barely soft”)
Sauté chopped onion in oil till translucent. About 7-10 min over medium heat.
Toss everything into a POWERFUL food processor (or Vitamix) and mix till smooth, add water for thinning to desired consistency. (I prefer not to thin it)
