- 2 lb Italian sausage
- 1 bag misto alla griglia eggplant, zucchini, peppers frozen
- 6 cloves garlic
- 1/3 cup pine nuts
- 1 small bag of arugula
- 1 cup shaved Parmesan cheese
- 3 tbs olive oil
Sautee sausage with olive oil and garlic. Once sausage is cooked add pine nuts until lightly toasted.
Microwave vegetables for eight minutes and add to cooked sausage.
Add arugula and cook until wilted. Turn off heat. Add Parmesan.
Serve as is or over pasta.
