Shrimp & Orzo Salad

INGREDIENTS

  • 1cuporzo pasta
  • 12 red onion, diced
  • 14 cupolive oil
  • 1tablespoonmustard
  • 1 ea. cucumber, diced
  • 2tablespoonslemon juice
  • 1teaspoonlemon, jest
  • 14 cupslivered almonds
  • 1lbshrimp, shelled & devined
  • 13 cupfeta cheese
  • DIRECTIONS

  • Cook orzo according to pkge. directions.
  • Mix olive oil, lemon juice, onions, cucumbers and mustard – set aside.
  • Drain orzo and mix in lemon jest.
  • Cook shrimp in butter & oil and what ever spices you like – for 1-1 1/2 minute per side.
  • Add lemon & oil mixture to the orzo – while still warm.
  • Add cooked shrimp and almonds.
  • Season to taste.
  • Serve.
