Spray baking pan(s) with nonstick cooking spray and set aside. Preheat air fryer to 305-310-degrees F.In a large bowl, combine all-purpose flour, almond flour, cinnamon, baking soda and salt; whisk to combine.In a separate bowl mix sugar, buttermilk, egg, vanilla, canola oil and mashed banana.Add wet ingredients to dry and gently fold until completely combined.Pour batter into pan(s) and top with sliced banana and sprinkle with sanding sugar, if using.Transfer pan(s) to the fryer basket. Cook for 25 minutes or until a toothpick comes out clean from the center of the bread(s).
