Kladdkaka is a popular Swedish chocolate cake, and it’s really similar to a molten chocolate or a chocolate brownie. A Swedish mud cake is the perfect thing to make when you are desperate for a sweet treat but don’t want to spend hours waiting for a cake to bake. - 100g unsalted butter
- 125g plain (all-purpose) flour
- 25g (4 tbsp) unsweetened cocoa powder
- pinch of salt
- 2 eggs
- 225g caster sugar
- 1 tbsp vanilla sugar

Preheat the oven to 175°C (350°F, gas 4, fan 160°C).
Lightly grease a deep loose-bottomed 21cm (8″) round cake tin.
Melt the butter and leave to cool slightly.
Sift together the flour, cocoa powder and salt and mix thoroughly. Set aside.
Whisk together the eggs and the sugars together until light, fluffy and pale, at least 3 minutes using an electric whisk.
Carefully fold the flour mixture into the eggs and stir until just combined.
Fold in the melted butter, ensuring that it is fully incorporated, and then pour into the prepared cake tin.
Bake on the lower rack of the over for about 18 to 22 minutes until the centre is lightly set.
Cool in its tin on a wire rack. Once cooled, it can be stored in an airtight container for up to 4 days.
