INGREDIENTS

  • 12 headcauliflower
  • 2tablespoonsbutter
  • 14 cupheavy whipping cream
  • 12 teaspoon pink sea salt
  • 1lbground beef
  • 4ouncesonions, chopped
  • 4largemushrooms, sliced
  • 1tablespoongarlic
  • 1carrot, chopped
  • 1stalkcelery, chopped
  • 4ouncesfrozen peas
  • 1cupbeef broth
  • 14 teaspoonxanthan gum or 1 teaspooncornstarch

    DIRECTIONS

  • Chop and steam cauliflower for 15 min or until cooked.
  • Drain and press dry with a towel to rice as much water as possible.
  • Add butter and cream and salt to food processor with cauliflower and pulse until thick and creamy.
  • While cauliflower is cooking, saute veggies and garlic on the stove.
  • Add ground beef and cook until browned.
  • Drain of excess fat.
  • Add broth and bring to a soft boil.Stir in xanthan gum or corn starch.
  • Season to taste with salt and pepper and other spices as preferred.
  • Stir until nice and thick and transfer to an 8×8 baking dish.
  • Spread cauli mash over the top.
  • Drag a fork over the top of the mash to make a rippled rough surface.
  • Bake in a 350 degree oven for 30 min or until it is hot and bubbly and the top is starting to brown.
