Easy Sweet Potato Casserole with Marshmallows


  • 1 ½ pounds sweet potatoes
  • 2 tablespoons butter, melted
  • 1egg
  • 2 tablespoons honey
  • ¾ teaspoon salt
  • 2 tablespoons butter, cubed
  • 1 (10.5 ounce) package miniature marshmallows
  • Directions

  • Step 1

    Place sweet potatoes in a saucepan, cover with water, and bring to a boil over medium-high heat. Reduce heat and simmer untilpotatoes are tender, about 20 minutes. Drain and mash.


  • Step 2

    Preheat the oven to 350 degrees F (175 degrees C). Grease a casserole dish.

  • Step 3

    Combine mashed sweet potatoes, melted butter, egg, honey, and salt in a large bowl; beat using an electric mixer until smooth. Transfer mixture to the prepared casserole dish.

  • Step 4

    Dot with cubed butter and top with marshmallows.

  • Step 5

    Bake in the preheated oven until marshmallows are golden brown, about 15 minutes. Serve immediately.

  • Cook's Note:

    For autumn flavors, add nutmeg and/or cinnamon.
