  • 1cupcarrot, finely chopped
  • 3tablespoonsbutter
  • 3tablespoonsflour
  • 8cupschicken broth
  • 2cupswater, if too thick
  • 2teaspoons better than bouillon if you add water
  • 1package mini gnocchi
  • 1 rotisserie chicken, breast meat chopped
  • 1 (2 ounce) bag Baby Spinach, finely chopped
  • 12 – 1cupheavy cream or 1/2-1 cuphalf-and-half

    DIRECTIONS

  • Melt butter and sautéed onion and carrot for 3-5 minutes.
  • add flour and cook 1-2 minutes.
  • add broth, water, better than boulion , bring to boil.
  • add spinach and cook until wilted.
  • Add gnocchi and cook 4 minutes.
  • Turn off heat and add cream.Do not boil after cram is in soup.
