Cheater No-Cook Pastry Cream


  • 1 ½ cups heavy cream
  • 1 (3.4 ounce) package instant vanilla pudding mix
  • 3 tablespoons sour cream
  • 1 pinch salt

  • Step 1

    Blend heavy cream, pudding mix, sour cream, and salt in a medium bowl using a whisk or a hand mixer set on medium speed until well-blended and smooth. Refrigerate for 5 to 10 minutes.


  • Cook's Notes:

    Use any flavor instant pudding mix.

    Substitute creme fraiche for the sour cream if desired.
