Before Meghan Markle, 38, married Prince Harry, 35, in 2018 she was avid lifestyle blogger and ran her own website The Tig. As well as lifestyle and mindfulness tips, the blog featured simple and tasty recipes from some of the Duchess’s favourite chefs.
Meghan was born and raised in Los Angeles so it’s no surprise she’s into clean eating and baked eggs and avocado is a delicious and healthy way to start the day.
The Tig was closed in 2017 ahead of Meghan’s marriage to Prince Harry but this recipe is still available on the website archive.
Describing the dish, Meghan wrote: “Okay, okay – you’re about to get crazy excited.
“Because that’s what happened to us when we learned how to whip up this perfect brekkie, adorably nestled into an avocado.”

How to make baked eggs in avocado
2 ripe avocados
4 fresh eggs
1/8 tsp pepper
1 tbsp chopped chives
Preheat the oven to 425 degrees.
Slice the avocados in half, and take out the pit.
Scoop out about two tablespoons of flesh from the centre of the avocado, just enough so the egg will fit snugly in the centre.

Place the avocados in a small baking dish.
Do your best to make sure they fit tightly.
Crack an egg into each avocado half.
Try your best to crack the yolk in first, then let the egg whites spill in to fill up the rest of the shell.
Place in the oven and bake for 15 to 20 minutes.
Cooking time will depend on the size of your eggs and avocados.
Just make sure the egg whites have enough time to set.
Remove from oven, then season with pepper, chives, and garnish of your choice. Enjoy!
