What’s better than pork? Pork wrapped in pork. This little piggy comes together easily and will please everyone at the backyard barbecue.
- 2 pounds uncased sausage
- 2 pounds thick-cut bacon
- 1shaker Burnt Finger BBQ Rub
- 1bottle Burnt Finger BBQ Sauce
How to Make It
Preheat the oven to 350°F. Wrap sausage with bacon strips in a basket weave pattern. Sprinkle BBQ Rub all over log. Place Bacon Explosion log on a raised rack such as a broiler pan or a cookie sheet with a wire rack on top. Loosely cover log with a sheet of aluminum foil.
Bake, covered, in the preheated oven for 40 minutes. Remove foil, and increase oven temperature to 400°F (200°C) and continue baking for 15 minutes. The last 5 minutes of cooking, baste the outside of the log with BBQ Sauce. Pull when internal temperature reaches 160°F (70°C).
In a grill or smoker cook over indirect heat at 250°F for 2 hours or until it reaches 160°F internal temperature.
