7 Shame-Free Ways to Eat Eggs for Dinner

Living here in the Upside Down, eating takes on both more and less meaning as the days move along. I’m regularly eating lunch between 2-3 pm; dinners get later; we’re having leftovers for breakfast and breakfast for dinner and returning to nostalgic foods of our childhoods that we may not have eaten or thought about in decades. Comfort foods have become standard parts of our regular routines instead of reserved for special occasions.

So let’s return to a classic from most of our childhoods: breakfast for dinner! It’s always fun because let’s face it, there is something that feels really indulgent about pancakes at 7 pm or a classic fry-up in the evening. But actually, eggs don’t really deserve to be confined to just breakfast, so let’s break (ahem) out of that notion.

Eggs are a great choice for dinner: They’re easy to prepare, usually fast, and a terrific, simple source of protein. So let’s move beyond just frying them up and making toast on the side: There are a lot of great ways to eat eggs for dinner. Here are 7 of my favorites.

Eggs for Dinner #1: Elevated Scrambles!

To get you started, scrambled eggs are the ideal simple building block for dinner eggs. Once you have mastered a great scramble, you can add any sort of meat, cheese, vegetable, or herb to make it feel more like dinner. Stir in pesto for green eggs and serve on top of pasta dressed with more pesto. Add heat in the form of salsa, Chinese chili crisp, sriracha, or harissa paste to amp up the savory elements and serve spicy eggs with rice for a hearty dinner. Swap out regular butter for truffle butter, then layer the scrambled eggs on toast and top with chives and lemon zest for a fancy open-faced egg sandwich.

Eggs for Dinner #2: Shashuka!

You can’t shake a stick these days without hitting a recipe for shakshuka. This Middle Eastern dish of a spicy vegetable stew that has eggs poached in it cries out for some of that bread you have been baking to dunk in it for a satisfying dinner.

A frittata is a natural way to serve eggs for dinner, and again, it is endlessly adaptable to whatever you have in your house. I love this version in spring when the asparagus first appears in the markets.
