DIRECTIONS
Mix the Blackening spices (the first 8 ingredients) in a small bowl.Place your salmon fillet on a plate. (I usually buy half a salmon filleted – cut it into portions and freeze it – using it up as I need it.) Pat it dry with a paper towel.Sprinkle the Blackening Spice all over your salmon and gently rub it inches.Pour olive oil into a heavy cast iron frying pan or other heavy bottomed frying pan and heat over medium heat.Make sure your pan is nice and hot and gently place your fillet in the skillet. Watch out it may spatter!Do not move the fillet! Cook it for 2 to 3 minutes until it is a nice dark color. You can peek under a corner to make sure it is.Flip the fillet over and cook for an additional 2 to 3 minutes until cooked to your liking.Serve immediately with Lime or Lemon wedges.I like to serve mine on a bed of Garlic Mashed Potatoes. – Enjoy!Source: Read Full Article
