Billy’s Blackened Salmon for One

INGREDIENTS

  • 1teaspoonbrown sugar
  • 1teaspoonpaprika
  • 1teaspoonchili powder
  • 1teaspoonground oregano
  • 1teaspoonblack pepper

  • 12 teaspoonsalt
  • 14 teaspooncayenne
  • 1skinless salmon fillet
  • 1tablespoonolive oil
  • 1limes or 1 lemon, cut into wedges

    DIRECTIONS

  • Mix the Blackening spices (the first 8 ingredients) in a small bowl.
  • Place your salmon fillet on a plate. (I usually buy half a salmon filleted – cut it into portions and freeze it – using it up as I need it.) Pat it dry with a paper towel.
  • Sprinkle the Blackening Spice all over your salmon and gently rub it inches.
  • Pour olive oil into a heavy cast iron frying pan or other heavy bottomed frying pan and heat over medium heat.
  • Make sure your pan is nice and hot and gently place your fillet in the skillet. Watch out it may spatter!
  • Do not move the fillet! Cook it for 2 to 3 minutes until it is a nice dark color. You can peek under a corner to make sure it is.
  • Flip the fillet over and cook for an additional 2 to 3 minutes until cooked to your liking.
  • Serve immediately with Lime or Lemon wedges.
  • I like to serve mine on a bed of Garlic Mashed Potatoes. – Enjoy!
